What is it about burgers that are just so god damn pleasurable? You just cant beat a big crusty bun filled with flavoursome sauces and a fat ass plant based patty. Yes, vegan burgers are where it’s at nowadays! The market is saturated with vegan burger joints, which goes to show, the vegans (and non vegans alike) are lapping it up! There is clearly a demand for these ethical patties, as people are taking a step away from the idea your bun needs to be filled with a precious cows flesh. Not very appetising.

Usually the mock meats and the seitan is not my thing, but this Green Goddess Pesto Burger is not trying to be a slab of meat. This patty is filled with green goodness and celebrates the sheer wonderment of plant based veggies, leaves and legumes. Keep it simple y’all!
There are many too floury, too stodgy or tasteless vegan burgers in the world that give the plant based diet a bad name. Yet, I can assure you that this one wont leave you disappointed. On the contrary, your belly is going to be super happy with you – especially if you top your burger with some sprouted beans (or even sauerkraut!)
You can expect to be mashing up chickpeas, spinach, basil and garlic and squashing them into flavoursome patties. Unlike a lot of burgers, these ones are baked, not fried! We try and keep it as heathy as possible here at The Hungry Herbivores!

Your body thrives off of nutritious greens, like the iron filled spinach packed into this burger. Some of these incredible green foods can be drunk too.. i’m not talking green juices today, i’m talking Matcha! I have green tea everyday, probably about five times a day. Green Goddess Pesto Burger

Pack your burger with flavour and Supergreens! These giant green patties are bursting with basil, garlic and finished off by the sink-your-teeth-in mashed chickpea texture.

Ingredients
  • 2 (400g) tins of chickpeas, drained
  • ¼ cup gram flour
  • ¼ cup walnuts
  • 1½ packed cups of spinach
  • ¾ cup basil
  • 3 garlic cloves, minced
  • ¼ cup garden peas
  • 1 tbsp nutritional yeast
  • 1 tsp salt
To serve
  • 5 Burger buns (GF if needed)
  • Sundried Tomato Ketchup
  • Handful of bean sprouts
  • Cucumber, thinley slices
Instructions
  1. Pre heat your oven to 190C/375F/Gas Mark 5 and line a baking sheet
  2. Firstly, blitz your walnuts in a high speed blender or food processor until a fine grain.
  3. Add the rest of the ingredients (except the peas) and pulse until it comes into a chunky paste. You will have to scrape down the sides a few times.
  4. Add the peas and mix in without mashing them too much.
  5. Use ⅓ cup to scoop out the mixture and form patties. You want them about 1" thick.
  6. Place in the oven for 20 minutes, then flip and return to the oven for another 15-20 mins. They should have formed a crusty exterior and not be too squishy in the middle.
  7. Slice your buns and toast. Sandwich the patty and add optional toppings!
