Hibiscus & Rose Cordial

- ½ cup dried hibiscus flowers
- ¼ cup dried rose petals
- 3 cups water
- ⅓ cup agave syrup
- juice of one lime
- Add the dried flowers, water and agave into a saucepan and bring to a boil.
- Reduce heat and bring to a low simmer for 30 minutes.
- In the meanwhile, sterilise a glass bottle with boiling water and drying with kitchen roll.
- After 30 minutes of simmering, take off the heat and stir in the lime juice and leave the cordial to cool for at least 15 minutes.
- Use a cheesecloth or kitchen cloth and a funnel to strain into the sterilised bottle.
- Taste and add more agave if desired.
- Serve cold with sparking water or whatever desire
