We’re weary of approaching salad recipes because of the vegan stereotype. Yet, salads can so easily be far from boring with just a little imagination.

I’ve recently been reminiscing about all of the beautiful salads I had on my trip round Asia, my favourite being Vegetabowl in Koh Tao, Thailand. Although I didn’t have any raspberry balsamic in Asia, I tasted many exotic dishes such as Cambodian Green Mango Salad and Bali’s Gado Gado salads. Thinking about these delicious flavours inspired me to explore ways in making salad exciting.

Balsamic is my all time favourite vinegar and is also know as the most common element to a salad dressing. However, this time we are experimenting with sweet and savoury flavour. Raspberries have a unique flavour, acidic but sweet. The combination of the two work beautifully as well as with leafy greens!

Ingredients
  • ¾ cup fresh raspberries
  • 2 tbsp. balsamic vinegar
  • 2 tbsp. olive oil
  • 1 tbsp. maple syrup
  • pinch black pepper
Instructions
  1. Simply blend together all the ingredient
  2. Pour onto a deliciously leafy salad!
