Ingredients
¼ cup flaked almond (soaked overnight or at least an hour with hot water)
½ cup coconut cream (top layer of the coconut milk tin)
2 cups oat or almond milk
¼ cup dates*
1tbsp coconut or brown sugar
few drops of vanilla extract
¾ tsp nutmeg
½ tsp cinnamon
pinch of ginger
pinch of salt
Instructions
Firstly drain the almonds and the dates (if you soaked them)
Place all the ingredients in a blender and let it so its magic**
Blend until it is completely creamy and no lumps
Serve immediately with an ice cube or bottle it up and use within 2-3 days.
Notes
* If you are not using Medjool dates, or your dates are hard and very dry, soak them overnight or in warm water for about 30 minutes to an hour ** The coconut milk tends to solidify when paired with very cold ingredients and is left blending for too long. If this happens, pour about a tbsp. of boiling water! Sorted.
