Rocket, Kale & Pine Nut Pesto

Serves: 1 cup pesto
- 2.5 cups kale
- 1 cup rocket leaf (Arugula)
- ¼ cup pine nuts
- ¼ cup cold pressed rapeseed oil
- 3 garlic cloves, minced
- 1 tbsp. lemon juice
- 1 tsp apple cider vinegar
- 1 tbsp. nutritional yeast
- 1 tsp salt & pepper
- Simply throw all the ingredients into a food processor and blend for a few minutes until smooth!
- Transfer into a jar or straight onto your pasta!
