First prep the Vegan mock tuna and set aside to refrigerate.
Next, take your skinned cucumbers, half them, and hollow out the core with a corer or end of a veg peeler, leaving a large hole for you filling. Make sure you keep one end of the cucumber closed.
Fill the holes with your mock tuna, sprinkle some dill on top and garnish with gherkins. Or get creative with your toppings!
